1 lb (450 g) ground turkey or chicken
1 small fennel bulb
1 small beet
1⁄2 English cucumber
8 cups leafy greens, such as spring mix
- In a large bowl, use a fork to combine ground turkey and seasoning. Form into 16 meatballs (about 2 tbsp each).
- Arrange in a single layer in Round Steamer or Multipurpose Steamer (it’s okay if the meatballs touch each other). Cover and microwave on high for 4 min or until cooked through.
- Thinly slice fennel and beet, and dice cucumber.
- Divide leafy greens, fennel, beet, and cucumber between four bowls. Top each bowl with four meatballs. Drizzle with dressing.
