Pure comfort: creamy, cheesy, flavourful and fast. Ideal for after-school activities or weekend lunch.
1 large cauliflower, coarsely chopped
1 large onion, diced
2 cups water
2 tsp Souvlaki Seasoning
2 tbsp butter
2 tbsp all-purpose flour
1 cup cream
1 cup grated low-fat cheddar cheese
- Simmer first 8 ingredients together until tender in Multipurpose Pot. Drain, reserving broth. Set vegetables aside to cool.
- Melt butter over medium-high heat. Stir in flour and CCB Dip Mix, stirring until bubbly.
- Add reserved broth, stirring continuously. Add cream, stir and bring to a simmer, stirring frequently, until thickened. Add cheddar and stir until melted.
- Mash cauliflower into small pieces. Add to cheese sauce. Bring soup to a simmer and serve.
Make extra, let cool in family- or individualized-portioned containers, label and freeze for an easy meal later. Simply reheat in Multipurpose Pot, or microwave until thoroughly heated.
